My Go-To Weeknight Recipes

As you guys know, I like to have an idea of what I’m going to eat throughout the week in order to avoid mindless snacking. Sometimes it’s hard to be creative when it comes to weeknight meal prep, but these are a few of our family favorite weeknight recipes!

Turkey Sloppy Joes

We make sloppy joes pretty regularly around here. Roux LOVES these and they come together pretty quickly, so they have become a fav weeknight recipe. We usually just eat the meat on a bed of raw spinach, but if we add bread, it’s usually just one slice of Ezekiel toast! 

Spaghetti Squash + Turkey Meatballs

This is another weeknight recipe that I’m able to throw together quickly PLUS, the leftovers are DELICIOUS. 

  • Bake spaghetti squash – here’s a simple breakdown
  • Mix dry Italian Seasoning with ground turkey and cook on medium heat
  • Top with any organic tomato sauce (PRO TIP: look for sauces with no sugar added!)

Once the meatballs and squash are baked, throw everything together for a delicious, filling meal!

BONUS: You can always use zucchini noodles instead of spaghetti squash or do chicken meatballs instead of turkey. They’re all delicious options!

Fish Tacos 

These fish tacos are incredible and take less than 30 minutes to make! Definitely a requirement for weeknight recipes! I always leave out the jalapenos because I’m a bit of a baby when it comes to spice. PLUS — BeachBody lists macros on their website, so it’s easy to stay on track of your fitness goals. 

Fresh mango salsa + Homemade Cinnamon Tortilla Chips

This salsa is THE BEST! I love to add these tortilla chips for a sweet dessert treat — plus Roux LOVES them so that’s always a huge bonus. 🙂

Clean Protein Bites

These are a weekly staple in our house. I love to keep them in the refrigerator for a grab-and-go snack. It’s so much better than grabbing anything process AND they keep you full! BONUS: Roux loves them too — so they’re kid-approved!

Ingredients:

  • ½ cup all-natural almond butter
  • ¼ cup raw honey
  • 2½ scoops Vanilla Shakeology (or you can substitute for about 3/4 cup of any protein powder!)
  • 2 Tbsp. mini semi-sweet (or dark chocolate) chocolate chips

What you do:

  1. Combine Shakeology, almond butter, honey and chocolate chips in a medium bowl; mix well.
  2. Spoon 13 equal-sized balls of dough onto plate about 1-inch in diameter each and enjoy!

If I’m ever at a loss for weeknight recipe ideas, I browse the Beachbody recipe blog. It always provides inspiration if I’m looking to change up our menu or try something new!
