Doc B’s Copycat Kale + Sweet Potato Salad

If you know me or have been in my social media family for a little while – you probably know that I really don’t like salad. I just get bored and would rather eat many other things! HA! When I come across a healthy, kale salad I love, that’s a big deal for me.

So when I found Doc B’s Kale + Sweet Potato Salad, I was SO excited! I quickly fell in love because of the VARIETY. And it’s KALE – there are not many salads I like with kale in them. It crosses everything off my list for a great salad: crunchy, salty, sweet, savory, and still healthy!

The homemade dressing is EASY too! [always a plus!]

I searched the internet and found a great copycat version that makes me so happy to have on hand.

I usually begin prepping the kale + dressing an hour or two before I plan to eat it, if possible – just to let the dressing soak into the kale before mixing the rest of the ingredients. Doing that ahead of time softens the kale. 

I would also encourage you to add a little dressing at a time. The dressing is thicker and can overwhelm the kale. If you’re following a meal plan like we usually are – portion out the dressing to stay within your guidelines. There are so many other ingredients and flavors – the dressing does not have to be the main highlight.

Doc B’s Copycat Kale + Sweet Potato Salad

Salad
  • 1 Bag Kale
  • 1 Large Sweet Potato diced & baked
  • 1/2 cup Pistachios unshelled
  • 1/4 cup Dried Cranberries 
  • 1/4 cup Parmesan Cheese
  • 1/3 cup Red Onion (optional) diced or sliced
Dressing
  • 1 5.3 oz Plain Greek Yogurt
  • 1/4 cup Olive Oil
  • Juice of Half Lemon
  • 1 Avocado
  • 4 cloves Garlic diced
  • Salt & Pepper to Taste
Instructions
  1. Pour the Kale into a large salad/mixing bowl.
  2. Blend the dressing ingredients in blender or food processor until smooth.
  3. Pour dressing over salad and massage into leaves until evenly coated. You may do this right before or overnight. Make sure to have extra dressing for serving time. 
  4. Top the kale with the rest of the toppings and mix.
