6 Salad Recipes That Are Filling and Delicious

This March I’m working hard to get extra greens into my diet. If you’re anything like me, a salad is the LAST thing I want to eat when it comes to ‘healthy’ food options. After lots of trial and error, I have found a few salads that I absolutely LOVE and I think you will too. Check them out below!

Doc B’s Copycat Kale + Sweet Potato Salad

I know kale doesn’t always sound the most appetizing, but TRUST ME! This salad will change your mind. The ingredients, including the dressing, are simple and SO EASY to make!

Broccoli Salad

This Love and Lemons Broccoli Salad is a family favorite. It’s packed with veggies and the dressing is sweet and tangy. I love that the base it broccoli and not lettuce!

Corn Salad

This recipe is SO GOOD! It’s filled with different textures and the Chili Lime Dressing is the perfect topping. This salad can make any little on a salad fan too ;).

Strawberry Salad

I LOVE strawberry salads — who doesn’t like fruit in salad?! For this particular recipe, I like to add extra mozzarella balls because why not?!

Caprese Salad

I had to include a classic Caprese on my list. This one from Dinner at The Zoo is delicious. She even gives the option of adding crumbled bacon for additional flavor!

Grape, Avocado, and Arugula Salad

This is one of my favorites for spring and Easter! The arugula provides SO MUCH flavor and the homemade balsamic vinaigrette is easy to make and incredible.

Clean Protein Balls

These obviously have no greens but they’re one of my favorite snacks AND they’re kid approved! Just pop them in the fridge for the week!

Ingredients:

  • ½ cup all-natural almond butter
  • ¼ cup raw honey
  • 2½ scoops Vanilla Shakeology (or you can substitute for about 3/4 cup of any protein powder!)
  • 2 Tbsp. mini semi-sweet (or dark chocolate) chocolate chips

What you do:

  1. Combine Shakeology, almond butter, honey, and chocolate chips in a medium bowl; mix well.
  2. Spoon 13 equal-sized balls of dough onto a plate about 1-inch in diameter each and enjoy!
