Toddler & Fitness Friendly Pancakes!

Here we go mamas! PANCAKES!

The struggle can be real when it’s Saturday morning {or Tuesday-Sunday in our house} and you want to enjoy some cozy pancakes in your PJ’s & bed heads… but mama still has fitness goals she’s working on.

Or… you simply are looking for healthier alternatives to classic breakfast staples.

These will save your life.

{INSERT} Banana Oat Pancakes.

The healthy ones.
That still taste like the good ones.

REAL TALK: you aren’t getting FLUFFY pancakes here.
But you get real close to the real thing, especially with that coconut oil crispy rim on the 3rd or 4th one… ifyaknowwhatimean.

WHAT YOU NEED:

  • 1 cup unsweetened almond milk
  • 2 large eggs
  • 1 large ripe banana
  • 1tsp. pure vanilla extract
  • 1 tsp. baking powder {gluten-free}
  • 1/2 tsp. ground cinnamon
  • 1 dash Himalayan salt
  • 2 cups old-fashioned rolled oats {gluten-free}
  • 1/2 tsp. extra-virgin organic coconut oil
  • 3 cups fresh mixed berries

WHAT YOU DO:

  1. Mix all ingredients: almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats in a blender; cover. BLEND until smooth.
  2. Heat coconut oil in a nonstick skillet over medium-low heat.
  3. Pour 1/4 cup batter onto the skillet; cook for 2-3 minutes or until bubbles form around the edges of the pancake. Don’t flip too soon – these babies are thinner than the fluffy ones – so be careful. Flip with a spatula; cook for an additional 90 seconds… or so.
  4. Do this with the rest of the batter.
  5. Makes 8 servings. Each serving is 2 pancakes. To keep it healthy – use syrup sparingly.. or not at all. You will be surprised how little you need when you serve with fresh berries!
  6. Serve with those fresh berries.

** LEFTOVER pancakes can be reheated easily!
