Healthy Slow-Cooker Jerk Chicken Tacos with Caribbean Salsa:

If you love EASY meals….
If your hubby like a little HEAT in his food…
If you love having a healthy meal ready for your family without the slave labor….

YOU HAVE TO MAKE THIS!!! Haha!! It’s DELICIOUS and SIMPLE!!! The chicken is so tender & all the flavors are really so perfect together. You could easily add or subtract from this…

{I would probably add some roasted sweet potatoes & a little corn to this to give it more of a Mexican feel}


Slow-Cooker Jerk Chicken Tacos with Caribbean Salsa:
Serves 6 – Gluten Free
Serving Size = 2 Tacos – 272 Cal – 6g Fat – 11g Sugar


Ingredients for Caribbean Salsa:
- 3 garlic cloves, crushed
- 2 tablespoons jerk seasoning
- Kosher salt
- 1.5lbs boneless chicken breasts
- 1 tablespoon lime juice
- ½ cup orange juice
- 1 tablespoon chopped fresh cilantro


 

Ingredients for Caribbean Salsa:
- 1 large mango, diced
- ½ medium Hass avocado, diced
- 1 tablespoon chopped red onion
- 1 tablespoon chopped fresh cilantro
- 1.5 tablespoon fresh lime juice
- 1/8 teaspoon kosher salt
- Freshly ground black pepper



12 Mission extra-thin yellow corn tortillas



FOR THE CHICKEN: Combine the garlic, jerk seasoning, and ¼ teaspoon salt & spread it over the chicken. Put the chicken, the lime & orange juices, and cilantro in the slow cooker. Cover & cook on high for 2 hours.

FOR THE CARIBBEAN SALSA: Meanwhile, in a medium bowl, combine the mango, avocado, red onion, cilantro, lime juice, salt, and black pepper to taste. Refrigerate until ready to serve.

Remove the chicken from the slow cooker & shred it using two forks. Pour any liquid in the slow cooker into a bowl, then return the chicken to the slow cooker. Add ½ cup of the reserved liquid, just enough to moisten the chicken, and season with 1/8 teaspoon salt & black pepper to taste.

Heat the tortillas in a skillet set over medium-high heat for about 30 seconds. Fill each with 1/3 cup of chicken and 2 tablespoons of salsa.

PS - like most corn tortillas, they CAN get a little crumbly/mushy with too much liquid - so heads up on that - or if you’re not too concerned - try them with flour tortillas!

I spent this morning focusing again on my mindset. Someone shared this video with me & I can’t stop listening to this. I lead a strong, dedicated, team of entrepreneurs. We are so passionate about healthy living from the inside out & in our business - we set monthly goals. Like everyone else, its HARD to push through obstacles. It’s TOUGH to stand up against pressure to give up. So, I shared this with my team because it applies to ALL of us - in business and in life.

The human mind is a powerful thing!!! Mindset is EVERYTHING!

You know…. I could spend my days putting my office together, finish unpacking, make my workspace exactly how I’ve visualized it.

…But I’d rather spend my whole day helping people get started on their fitness journeys… I’d rather focus in on helping my TEAM reach their goals & help them know they HAVE what it takes to succeed! I never thought this would be my reality. LOVING what i do for work so much, that I can’t wait to get started each day.

Trust me, leading such a large, successful team is NOT easy. You have to learn when to place your focus and energy. You have to have THICK skin you guys - THICK RHINO SKIN. People can expect a lot from you. BUT…. but if you make your key priorities REALLY clear in your own mind - you can work on sharing that with all who will listen & really set an example of how to balance your work, your passion, and your family. I work hard. Every. Single. Day. I don’t take many days “off” - ever. And that’s not a complaint. I LOVE what I do - but I HAVE to control my mindset. I must fill myself up time & time again {sometimes multiple times a day} or I simply won’t make it.

I hear a lot of excuses - every day. Some from myself, others from my team, and then also from my challengers - those who look to me to help them reach their health + fitness goals. Look, its not a matter of whether or not these excuses are valid. Some of them probably are - but at the end of the day; we all know… they are excuses. We have to change our MINDS!! It isn’t about keeping up with so-and-so or doing “as good as” anyone else… its about following through with what YOU said you would do. Its about completing what you started - and rising UP to the occasion to be a person who keeps their word. Don’t be a quitter. I was a quitter for virtually all of my 20’s. I’m not going back there.

Here’s where I want to encourage you. Listen to that video - about 10 times 😛 and put in some alarms in your phone with ONE-liners that stick out to you.
1. Where have some of your excuses crept in?

2. What are you going to do about it?

You either will… or you won’t. I want to encourage you to bring your BEST and really see what you’re made of!!!

UNDERDOG : For-The-Win

I’m really looking forward to getting to know those who connect with me - here on my site; my season of life, my passions & my commitment to growth. I’ve seen my name in lights, my face with a WHOLE lot of make up on, speaking on a stage, on a life-size BILLBOARD in Nashville, Elsa braids, and I’ve received an incredible amount of compliments recently…. I am BEYOND grateful for this.

But I wanted to remind you where I come from : It isn’t all perfect … not even close! I’m a REAL person.

* I grew up in an alcoholic / abusive home.
* My parents divorced when I was 5.
* My middle school & high school nights were spent in an incredibly HOSTILE home with my dad & step mom… doing my best at 14 yrs old to protect my 2 year old sister.
* Jesus was my ONLY comfort and security… so thankful He brought me to HIM when I was 12…. my ONE constant.
* I raised a hog & 3 steers in high school…. worked really hard IN school & out of it.
* My mom was diagnosed with MULTIPLE brain aneurysms when I was in 5th grade & she spent the entire length of my middle school through college years battling seizures, memory loss & multiple brain operations.
* I was completely homeless from the time I was 18 until 24 - living on friends’ couches and staying in guest rooms {so THANKFUL for those friends!}
* My grandfather died the week before my 19th birthday & my dad died the week after my 19th birthday - from multiple organ failure resulting from alcoholism.
* The day my dad died I was completely shut out, by my step-mom, at 19. All I had were my sisters.
* I do NOT have a Bachelor’s Degree.
* I went from one unsuccessful relationship to the next… always missing something… always wandering.
* I have lived paycheck to paycheck, I’ve lived ABOVE my means {which weren’t much}, I’ve had a car repossessed & I’ve felt like I just do NOT belong…
* I used to write a CHECK to fill up my gas tank because I knew it would take 3 days to clear the bank & I had time to get money in there…

I’m not proud of all of these things… but I am NO LONGER a victim - I’m a VICTOR. That is ALL because of what God has done in my life…. all the way down to Beachbody, our family’s biggest blessing. All of it is because He cares about the details of our lives.

The ADVERSITY is definitely my ADVANTAGE now and a LARGE part of my success. It gave me some FIGHT. God knows, I have FOUGHT hard for my family these last 2 years… I don’t give up anymore.

So… while I LOVE make up, glitter, hair, and all things girly - I am one of those girls who has definitely been through the mud. I have dealt with those hurts with a LOT of prayer, grace & personal development.

MY name doesn’t belong in those lights; it truly is by the grace of God that I am an overcomer! And, you are too!
